Oriental Vegetarian Chicken and Rice

Another nice little oriental dish similar to yesterday's very popular Vegetarian Chilli Beef Lettuce Wraps and again I'm using Quorn instead of chicken, but chicken would work just as well!

Serves 2
400g diced chicken (Quorn)
2 thinly sliced red peppers
1 cup of rice (easy way of measuring two portions)
Soy Sauce
Oyster Sauce
Sweet Chilli Sauce

First off, get your kettle on, put a saucepan on a back burner on a medium high heat and frying pan on the front on a medium high heat too. We don't want the meat/quorn to cook too fast on the outside and not be cooked in the middle, and the rice can just blip away instead of boiling over. Once the kettle has boiled, pour one cup of rice into the saucepan, two cups of water (use the same cup) and a pinch of salt.
Slice your peppers nice and thin too. Remember that the thinner, or smaller, that you slice these, the quicker they'll cook through. We'll be adding these in right at the end and we still want a little crunch.
Now you can prepare the sauce! Once again it's my holy trinity for a good sticky, sweet and spicy sauce; Sweet Chilli, Oyster and Soy Sauce. Mix these together in a bowl by 200ml of Sweet Chilli, 200ml Oyster and 50 ml Soy. Try the sauce out, if it needs tweaking (it may well do, we're all different!) then add what you fancy, have a play, and enjoy what you're doing! THAT is the most important thing!
Most of the water should have been soaked up by the rice by now, (remember now to stir it, use a fork) and the meat/quorn should be toasting really nicely. Here is where we apply the sauce, it should just get soaked up by the meat, which will act as a sponge, the remaining will caramelise. Warm that through, and shortly afterwards, add the peppers!

Once nicely mixed, drain the rice (and if, like me, you wear glasses remember to remove them otherwise you'll be temporarily blinded from steam!), split this between two dishes, and then generously split the chicken/quorn mix between you. Don't let ANY go to waste, this is liquid gold!
